This tasty recipe is easy to throw together if you already have cooked chicken on hand.

If you don’t already have cooked chicken then be sure to prep and cook your chicken first. I recommend marinating for a few hours and grilling for peak flavoring!

I use my homemade mayo in this recipe for a healthier option that tastes amazing!

I also prefer the spice of Dijon mustard but you can try with classic yellow or your favorite mustard.

This recipe would also taste great with extra add-ins like celery, sliced almonds, or dates!

If you are looking for a sugar-free option then simply omit the honey.

Equipment

  • 1 Mixing bowl

Ingredients
  

  • 3 cups Diced cooked chicken (cooled) thighs or breast
  • 1 Small onion chopped
  • 1/2 cup Mayonnaise
  • Tbs Honey
  • Tbs Dijon Mustard
  • ¼ tsp Sea salt
  • ¼ tsp Black Pepper
  • Celery seed garnish

Instructions
 

  • Finely shred or dice 3 cups of cooked chicken
  • Finely chop onion
  • Add chicken, onion, mayo, honey, and mustard to bowl and mix together
  • Add salt and pepper and combine thoroughly
  • Season to taste as needed
  • Plate and sprinkle with dried celery seed

Notes

Best served chilled.
I prefer this recipe with marinated grilled chicken for extra flavor!
Use this one-minute mayo for a healthy swap.
Feel free to add in fresh celery or veggie of your choice for some extra crunch.
If you prefer sweeter, add more honey. If you like spice, try more Dijon mustard and pepper.
I tend to eat this straight from the bowl but it’s also great with your favorite crackers or as a sandwich.
